Unfortunately, the fact that there is an investor's property in the family is of no benefit to obtaining a visa. Considering that we're talking about your father-in-law as a resident in Portugal, you and your husband don't fulfill the requirements for family reunification, either. That said, you or your husband would need to apply for a visa independently from your father-in-law's Golden Visa application. Please note that if you want to spend more than 3 months in Portugal, you can apply for a temporary or even a residence visa to Portugal. How can we use a family member’s golden visa property in Portugal to obtain easier visa access?
My father-in-law is an investor in the Portuguese golden visa. Me and my husband use his property regularly to spend time by the beach. But the issue is none of us have a golden visa so we have to keep applying for Schengen and can only stay there for 3 months maximum. Is there any way we can have more access? If not by golden visa, then what other options do we have?

Since you are not dependent on your father in law, you cannot use family reunification to obtain a residence permit. But you can consider asking for a long-term schengen visa and multiple entries so you don't have to keep asking for Schengen visas.

Portuguese Golden Visa allows a large family reunification right, however only regarding direct family and in some cases with a need for proof of dependency. As such, the main investor may, with one investment, reunify the spouse, children (even when more than 18 years old if dependents and students), parents and parents-in-law (when less than 65 years old, if economically dependent.)

Holders of a residence permit for investment may apply for family reunification, applicable to the spouse and ascendants, and to minor children dependent on the applicant, including children over 18 years of age who are in charge of the couple or one of the spouses, who are studying in Portugal or abroad. This does not apply to your case. Extensions of stay for Schengen visa are submitted in any SEF’s directorate or regional delegation, on a standard form, signed by the applicant or his/her legal representative, or on-line, but documentary evidence of the motives for extending the validity or the duration of stay must be delivered, including, while visiting family, documentary evidence of the family link is mandatory.
