Can I get the start-up visa in Canada with a project that I already started in another country?

It will have different applications and operations in Canada if I launch it there, but the project will not be brand new. Does the startup have to be totally original?

The SUV Program exists to promote innovative growth in Canada, and in many cases, entrepreneurs will be creating a new business. Applicants to the program with an already-incorporated entity is possible, but you would be expected to set up a Canadian branch (incorporation in Canada) and transfer the IP of the home company to the Canadian one, if applicable, to maintain the spirit of the program.

You can definitely start your start-up idea in Canada as long as there is a
designated organization which accepts your project and provides you with
the letter of support.

You might be able to bring your idea developed outside Canada into a new startup that would be created in Canada. It could work, but you should see your Canadian immigration lawyer for more details.

Absolutely, the Canadian Start-up Visa Program is designed to attract immigrant entrepreneurs possessing skills and potential to establish innovative businesses in Canada (excluding Quebec). Key aspects encompass having a qualifying business, securing support from designated organizations, meeting language requirements, ensuring settlement funds, and qualifying for a work permit. Projects need not be entirely groundbreaking but should contribute value and innovation to the Canadian business landscape.
