My fiancé now lives in Dubai on a self-employed visa where he has to make a minimum amount of income per month to maintain it. I want to move there to be with him, but we’re not officially married so I’m not sure if I can be included on his visa as a non-wed partner?

In the Emirates we don't have such a term. You two need to be legally married in order to have the sponsorship application submitted.
