How long would I have to keep my deposit in a Panamanian bank to continue being eligible for residency?

Could I withdraw some funds at some point to invest in real estate inside Panama?

Depending on the residency option taken by bank deposit, the funds would need to be kept for 3 or 5 years, being available for withdrawal upon the term completion.

Depending on the type of residency permit you apply to, a bank fixed deposit should be done for either 36 or 60 months. Friendly Nations Visa requires a USD 200k deposit for 36 months; the Self-Solvency Residency program requires a USD 3000k deposit, for 36 months; the Qualified Investor’s Visa will require a deposit of USD 750k for 60 months. There are some available options where you may invest directly in real estate and obtain residency, as well.
