Business activities are reopening step-by-step. From Jan. 18, all retail stores will reopen. All appointments with the public sector need prior notice by email.
Generally, you can do business here because Greece has been less impacted by Covid and life is getting back to normal.

Travel restrictions are expected to remain in place until Jan. 21. People entering from the UK are now required to take multiple COVID tests while quarantine periods could also take as long as two weeks.
Starting from Dec. 23, Greece has adopted new measures to facilitate foreign investors. Golden Visa investors can now complete all procedures remotely from wherever they reside, including the application of a Greek Tax Number, opening of a Greek bank account, acquisition of properties, business plans elaboration or intangible investments’ implementation, and the submission of their Golden Visa applications without having to travel to the country, by signing a power of attorney at a Greek Consulate near their current residence. Temporary residence permits are also being issued within 40 days.

You can proceed with any business. I would suggest you to sign a power of attorney at the Greek Embassy to proceed.

Please be aware that due to the pandemic crisis there are still travelling restrictions in Greece, especially from the UK which, hopefully, will be limited soon as the vaccine is already in the market.
In the meantime, I would suggest to be in touch with some real estate agents so as to provide you with properties that may be of interest.
